Criollo Cocoa

These Criollo Cacao beans are grown in the Peruvian Amazon, which is considered the original source of cacao. Long before being shared with the rest of the world, cocoa was part of daily life for Peru's indigenous people, so cocoa and Peru have a deeply connected history. Most Peruvian cocoa is produced by small-scale farmers, for whom the weekly harvests from April to September are essential for their livelihoods. These farmers sell their harvests to cooperatives, which function as links between them and the market.

The Criollo tree is one of the original and least common varieties of cocoa, grown mainly in Central and South America. It is considered the "king of cocoa" because of its purity and the rich, delicate flavours it produces. Unlike the more commonly grown Forastero and Trinitario cacao varieties, Criollo offers a less bitter and more aromatic chocolate experience, making it particularly suitable for ceremonial use.

Usage Ceremonial

  1. Set the Intention: Before you start, it is important to prepare the space and yourself. This can be by meditating, lighting a candle, or setting an intention or prayer to show respect and gratitude to the cocoa plant and the forces of nature.

  2. Water Heating: Heat water until it is hot, but not boiling. The ideal temperature is around 70-80°C (158-176°F). This helps the cocoa melt without destroying the delicate nutrients and enzymes.

  3. Mixing: Gradually add the cocoa powder to the hot water. The amount of cocoa powder can vary depending on the desired strength and size of the group. A general guideline is about 1-2 tablespoons of cocoa powder per cup of water.
