What is mad honey?

Mad honey is honey produced by bees from the nectar of certain species of rhododendron. These plants contain grayanotoxins, which end up in the honey. The honey is mainly produced in Nepal and Turkey; in Nepal, the Gurung people have traditionally collected wild honey from the Himalayan giant honey bee (Apis laboriosa), with honey hunters climbing along cliffs to reach the nests. The honey is dark and reddish in colour and has a slightly bitter taste.
