These 100% raw cocoa paste chunks from Ecuador are made from the indigenous Arriba ‘Nacional’ bean. The cocoa grows in permaculture systems amongst tropical fruit trees such as oranges, avocados and mangoes. The beans are carefully cultivated by smallholder farmers who work to strict fair trade standards.

Usage

You can crumble the cocoa paste and use it straight away, add it to dishes or melt it gently. It is best to melt it in a bain-marie or in a pan over a very low heat, so that the cocoa does not burn.

To prepare a hot cocoa drink, heat water or plant-based milk over a low heat. Then add the desired amount of cocoa paste and stir until it has completely dissolved. You can add natural sweeteners or spices to taste, such as cinnamon, vanilla or chilli.

Recommended dosage for use in a ceremonial setting:

Beginners: 20 to 25 grams
Intermediate: 25 to 40 grams
Experienced: 40 to 50 grams

For ceremonial use, ensure you have a calm and pleasant environment in which you consciously take the time to prepare and drink the cacao.
